Wild Orange Essential Oil Vinaigrette Salad Dressing

Summertime Favorite

As spring is here and summer is fast approaching, you will soon be asked to bring a side dish or salad for an upcoming potluck or social gathering. What to make? This is always the question for me. Frankly, it’s difficult to come up with something easy, healthy and good. You don’t want to be the person whose dish remains virtually untouched.

I enjoy a nice healthy green salad from time to time, but it seems like bottled salad dressing often ruins the entire dish. The salad dressing has an unappealing taste to me, and the “healthy” part of the salad seems to be cancelled by the extra calories, preservatives and other unnecessary ingredients often found in most purchased pre made dressings. Recently I found a lovely salad dressing recipe on Pinterest using Wild Orange essential oil and tossed in a few ingredients that I already had in my refrigerator and panty. Voilá! It was a success – a fairly healthy and tasty green salad.

Salad Dressing:Wild Orange

1 cup canola oil

1 tsp. Dijon mustard

1/3 cup balsamic vinegar

1-2 drops Wild Orange essential oil

2 T. Miracle Whip Light

1/2 cup brown sugar

Sea salt and pepper to taste

Directions:

Combine ingredients and blend until smooth. A food processor or blender is recommended. However, I’m fairly kitchen lazy and just used a hand wire whisk to blend and then placed in a glass jar with lid and shook until completely mixed.

Salad Ingredients:

This salad was a last minute creation and I used ingredients that were already in my pantry and refrigerator. You may substitute as desired. Canned pears and dried cherries keep their freshness and don’t turn brown or mushy when making ahead of time and serving later.

Mix salad ingredients together. If making beforehand, layer it as follows: canned pears, feta cheese, salad mix, pecans and dried cherries. The heavier and wetter ingredients should be on the bottom to help preserve the freshness of the salad. Just before serving, add salad dressing. Most likely you will not use all of it. Refrigerate unused portion and have it ready for next time. Dressing can be stored in a glass container for a month or so. Enjoy!
